Welcome to my new followers from all around the globe.

I started today at 7.30am with an early talk in Sydney, Canada, US, Singapore and Taiwan presenting the latest science on Food & Mood, followed by an afternoon session on the same topic to the UK and California. 

Nutritional Psychiatry is an emerging area of science that is truly fascinating and very much needed right now.  With 67% of UK diets coming from processed and ultra processed foods leading to a plethora of nutrient deficiences and 1 in 6 teenagers with a diagnosed mental health condition, we really need to all be aware of this important topic. 

I covered the latest scientific studies on food & mood, the importance of nourishing the gut microbiome, how the gut:brain axis impacts our sleep and all the key nutrients and lifestyle factors that can help us create more of those important happy chemicals Serotonin, Dopamine and calming Gaba.

“I have had raised cholesterol for years and recently it jumped up even higher, so my GP advised me to go on Statins. I had reservations about taking them as I know they can make you achey and tired and I’m not keen to take more medications.

Making memories in Croatia with the fam. Returned recharged and energised 😁. 

First time in Croatia. It’s special! 1000 islands, 80 of which are inhabited. The best way to experience it is to travel around from island to island. The water is the clearest I’ve seen in the whole of Europe and so turquoise and the perfect temperature. 

You probably know that Dubrovnik is where they filmed some of the game of thrones and Korcula felt like a film set, each island has its own unique vibe. 

One of my absolute favs is Mljet which has the most stunning torquoise lakes, which we enjoyed hiking around and swimming. 

The food is fresh and so delicious and really good value compared with anywhere in Europe. Tons of fresh fish, seafood and simple salads plus gelato 🍋☺️. 

Go make memories in Croatia.  Compared to the rest of Europe in summertime it’s much less crowded, great temperature (not sweltering 🥵), cooler in the evenings and great food. Really good value too. Total win! 

I’m looking forward to visiting again one day very soon I hope. Who wants to join me? 😉

Simple pleasures ! 

Don’t wait to try these raspberry, almond and white chocolate muffins!  Easy peasy lemon squeezy. Get the whole family cooking and incorporate fresh or frozen berries and ground almonds to your sweet treats for extra nutrients like calcium, polyphenols and vitamins.

Ingredients:  Serves 12 muffins - 250g raspberries - 3 eggs - 125ml light and mild olive oil - 200ml skimmed milk - Almond essence, to taste, about 3 or 4 drops - 200g self-raising flour - 100g ground almonds - 75g white chocolate chips - 100g coconut sugar 
- 75g flaked almonds 

Simply mix together, share into muffin cases and bake at 160c fan for 25 mins.

Making acrylamides funky! It’s actually an important topic we should all be aware of especially during BBQ season. Do you love your toast on the burnt side or meat charcoaled with crispy edges or your chips 🍟 dark and crisp? If so this is worth knowing right? 

Acrylamides are basically the brown bits of over cooked foods, they are classed by the FDA as possible carcinogens.

Avoid very brown areas in food. Cook cut potato products such as frozen french fries or toast to a golden yellow color rather than a brown color. Brown areas tend to contain more acrylamide.

Some ways to avoid acrylamides include:

-limiting crisp and baked potato snack intake
-don’t store potatoes in the fridge 
-try not to overbake foods
-avoid baked or fried foods with added sugar

She initially presented with fatigue, bloating, rosacea, and hair loss. After some testing and tweaks in her diet alongside carefully selected supplements look at her transformation. Her initial blood tests showed low thyroid function, low ferritin (for hair), low B12, low B2 and and dysbiosis.

Eating used to be intuitive in evolutionary terms. We ate the foods that nature provided, in season,  and they supplied all the nutrients our body's needed to function optimally.

The challenge comes when you are surrounded by ultra-processed, nutrient-deficient, empty calorie foods and your intuition no longer knows which way to turn.

This food is designed to be hyperpalatable or Bliss point foods. When we eat this food it triggers dopamine release and leaves us craving more meaning our waistlines expand and we gain weight.

25% of 11 year olds in the UK are currently overweight or obese. Being overweight at this age means you are much more likely to keep that weight for the rest of your life, setting you up for a lifetime of potential health issues like diabetes, cancer and heart disease.

Plants really do protect us from disease!

Phytochemicals, also called phytonutrients, are helpful compounds found in plant foods. They may help prevent chronic diseases, including cancer.

These can be found in vegetables, fruits, beans, grains, nuts and seeds. But the type and amount of phytochemicals in different plants varies. No single plant food can protect you from disease. You can get the most protection by eating a variety of plant foods, sim to eat the rainbow 🌈. 

So many of us eat the same foods every week or even every day. A good place to start to add diversity is to add one new fruit or veg to your weekly shop, add herbs and spices to meals, buy bagged salads or mixed pulses to get that variety and diversity into your diet. 

Potential benefits of phytochemicals include:

* Improving our mood
* Strengthening the immune system
* Reducing inflammation
* Preventing DNA damage and helping DNA repair
* Slowing cancer cell growth
* Regulating hormones
* Preventing damaged cells from reproducing  
* Improving gut health 
* Making our skin glow

Among the phytochemicals as potentially providing health benefits are polyphenols, flavonoids, isoflavonoids, anthocyanidins, phytoestrogens, terpenoids, carotenoids, limonoids, phytosterols, glucosinolates, and fibres.

One of the tests I regularly use in our clinic is the Adrenal Stress Test, a simple test that shows us exactly how much cortisol you are pumping out and how its impacting your health, sleep, waistline, poor digestion, ageing and stress levels. Due to our modern western busy switched on lifestyles we find so many people have high stress levels which is not healthful.

10 healthy and delicious ways to prepare and enjoy toast! 

All recipes mentioned come from my book 'The teenage health and wellness guide' and are listed below: 

1. beetroot hummus, cucumber and olives 
2. cream cheese, frozen berries and fresh mint
3. chocolate hazelnut spread with raspberries and almond slices 
4. tuna, celery, red onions, cucumber and mayonnaise

Hot and spicy kohlrabi, fresh greens and radish salad

Ingredients
* 2 whole kohlrabi , peeled
* head of spring greens , finely shredded
* 2 bunches spring onions , very finely shredded
* small bunch French breakfast radishes , quartered, leaves attached

For the Dressing
* 	1/4 cup freshly squeezed orange juice
* 	1/4 cup cider vinegar
* 	1/4 cup sesame oil, or olive oil
* 	2 Tablespoons raw honey
* 	2 teaspoons Dijon mustard
* 	1 teaspoon finely minced fresh ginger root
* 	1/4 teaspoon orange zest
* 	1/4 teaspoon Himalayan sea salt
* 	1/4 teaspoon freshly ground black pepper
* 	1/4 teaspoon celery seeds
* 	2 Tablespoons sesame seeds, for garnish, optional

Easy peasy. Chop veggies and pour over dressing and enjoy.

Gut loving healthy muffins 

Are you tempted to try these? They really are so moist and delicious. Add chopped nuts too for added nutrition and fibre. Tag a friend who might enjoy these too 😘

1 x grated carrot (medium)
1 x grated courgette (small)
200g spelt flour
2 eggs
100g raisins
1 large tbsp plain kefir yoghurt
1 x small tin of pineapple chopped with juice
60g light and mild olive oil 
1 tbsp maple syrup
1 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp mixed spice
1 tsp baking powder
1/2 tsp bicarbonate of soda
pinch of salt

Method

Mix together until its all combined

Pop into 12 small paper cases or 6 large muffin cases and bake at 170c (fan) for 35 mins

Enjoy any time of the day x

An absolute rainbow staple in my house. Serve this crunchy delicious slaw with anything. Are you gonna try this? Save and tag a friend if you think they’d enjoy it. 

Ingredients

1 lb shredded veggies (your choice of cabbage, carrots, bell pepper, snow peas, broccoli slaw, Brussel sprouts, etc) roughly 6-7 cups.
3 scallions, sliced
1 cup cilantro (or Italian parsley or mint) chopped

Asian Slaw Dressing:
* 	3 tablespoons olive oil
* 	1 tablespoon toasted sesame oil
* 	2 tbsp rice wine vinegar
*  1 tbsp honey or maple syrup
* 	1 tbsp soy sauce or tamarind
* 	1 garlic clove, finely minced ( use a garlic press)
* 	1 tbsp ginger, finely chopped
* 	½ teaspoon salt
* 	½ teaspoon chili flakes or chili paste ( optiona

Optional toppings:
* 	Toasted sesame seeds
* 	roasted, crushed peanuts or cashews

Instructions
1. Toss slaw ingredients together in a large bowl. Add cilantro and scallions.
2. Whisk Asian Slaw Dressing ingredients together in a small bowl.
3. Pour dressing into slaw and toss well.
4.  Garnish with sesame seeds and/ or nuts.

These are so simple and such a great healthy snack packed with Anthocyanin polyphenols -a potent anti inflammatory from red cabbage. Red cabbage is one of my fav foods, so crunchy, fresh and delicious. 

Serve these with a simple peanut satay sauce.

Ingredients

½ lime, juiced
1 tsp clear honey
1 tbsp soy sauce
1 tbsp curry powder
3 tbsp smooth peanut butter
165ml can coconut milk
Method
STEP 1
Mix the lime juice, honey, soy sauce, curry powder and peanut butter in a small bowl. Add a splash of water if it’s too stiff. Transfer to a small pan with the coconut milk, and heat gently for 5 mins stirring continually, until combined.

I’ve had a number of questions on energy drinks and the caffeine content of certain drinks. 

Alarmingly something like Monster has a whopping 54g of sugar that’s double the recommended amount of sugar for an adult for a day and 160g of caffeine. When combined with stimulant ingredients such as guarana or ginkgo Biloba that can alter the caffeine’s effects making it much more powerful. It can act on our whole central nervous system leaving us anxious, wired, unable to concentrate, affect our mood, create blood sugar imbalances leaving us exhausted after that initial burst of energy too.

The world of Nutrition constantly changes and one of the reasons I love my job as much as I do, is that it includes a lifetime of learning and updating my knowledge. Since I graduated way back in early 2000, I have seen so many dietary fads come and go and so many people spending their lives dieting, restricting and fearful of food.

My goal has always been to share evidence based sensible, sound, practical, sustainable advice about how we can thrive and feel fantastic, optimising our health and well-being, achieving a healthy weight and working on disease prevention through diet and lifestyle interventions while really enjoying food 😁. We can even now turn back our ageing with these bespoke health programmes . This is measurable through simple testing called @glycanage. 

In addition to this test, we also offer the very latest health tests including DNA/genetics, gut health, thyroid, adrenal stress tests, hormone tests and much more. I’m thrilled to head up my team of nutrition experts who are all so knowledgeable and as passionate as I am.

Brown miso is packed with probiotics for the gut, I got some questions asking what to do with it. This is a lovely simple dish to try. Serve with a side of kimchi for extra gut bacteria 🦠.

Miso brown rice & broccoli salad with fiery prawns.

Ingredients
* 100g brown basmati rice
* 140g ready-shelled frozen edamame beans
* 140g broccoli (about ½ a head), broken into florets
* 1 tbsp brown miso paste
* ½ tsp finely grated fresh ginger
* 1 tbsp rice vinegar
* ½ tbsp clear honey
* 2 tsp sesame oil
* 2 tsp vegetable oil
* 3 garlic cloves , thinly sliced
* 1 red chilli , thinly sliced
* 200g raw shelled prawn
* 2 spring onions , finely sliced
* large pack coriander , roughly chopped

Method
* STEP 1Cook the rice following pack instructions, adding the edamame beans for the last 3 mins of cooking. Drain well.

* STEP 2Meanwhile, steam the broccoli for 4-5 mins until tender. Run under very cold water, drain thoroughly and pat dry. In a small bowl, mix the miso, ginger, vinegar, honey, sesame oil and seasoning.

* STEP 3Heat the vegetable oil in a non-stick frying pan. Add the garlic and half the chilli and cook gently for a couple of mins, taking care not to burn. Throw in the prawns, lots of black pepper and a pinch of salt. Turn up the heat and cook for a few mins until the prawns are cooked through. Toss the miso dressing with the cooked rice, adding the spring onions, coriander and broccoli. Season and stir together. Spoon the spicy prawns on top, scatter over the remaining chilli and serve.

Nuts
Nuts are great for your body full stop. Nuts and seeds are powerhouses of antioxidant vitamin E and lots of minerals, they are also rich with essential oils and amino acids that aid your focus. Just a palm size handful a day of unsalted mixed nuts will do the job.

Aim for the unsalted ones and a portion is a flat sized palm sized amount. 

If you can’t eat nuts seeds have very similar benefits so enjoy those, add them to smoothies, oats, salads, fish toppings, to muffins, cookies or energy balls.

Brain boosting smoothie 
(For the non breakfast lovers) 

Ingredients
* 1 small greenish banana
* 1 tbsp porridge oats
* 80g frozen berries
* 150ml milk of choice including nut milks
* 1 tsp honey
* 2 tsp chia seeds or ground flax seeds
* 1- 2 tsp nut butter 
* 1 tsp vanilla extract

Method
* STEP 1Put all the ingredients in a blender and whizz for 1 min until smooth.

* STEP 2Pour the banana oat smoothie into two glasses to serve.

In my last video I discussed aiming for 30 different plants a week. This is how it could look. 

Why? The more diverse plant foods we feed our gut microbes, the more diverse they become and the more ‘skills’ they have to…
* 	Train our immune cells.
* 	Increase our resilience to infection.
* 	Strengthen our gut barrier.
* 	Communicate with our brain.
* 	Balance our blood sugar, lower blood fats and help prevent against many diseases.

So what counts? All of your fruits, vege, wholegrains, legumes (beans and pulses), nuts and seeds, herbs and spices. 1 portion per point, with herbs and spices getting 1/4 point each.
 
Here’s what 30 plant points can actually look like:
VEGE – Tomatoes, mushrooms, broccoli, pepper, sweetcorn, spinach, potato, onion, peas, carrot.
 
FRUIT  – Grapes, apricot, strawberries, watermelon, blueberries, raspberries, apple, banana, orange, kiwi.
 
GRAINS – Oats, brown rice, quinoa, buckwheat, wholewheat flour.
 
LEGUMES, NUTS & SEEDS – Chickpeas, lentils, tinned beans, pack of seeds, pack of nuts (mixed for extra points!).

My other tips for getting in more plants would be to incorporate pre-packaged vegetables, such as stir fry mixes, mixed salad leaves or five grain pouches. Each mix offers a variety of vegetables.

Also adding toppings to the meals you already enjoy so you can increase your plant intake without having to make a huge change to your diet. Sprinkle seeds onto yoghurt or salads or adding fresh basil and coriander to dishes is a great way to start.

Thyme Steam Inhalation for Cough 

Thyme helps fight respiratory infections and is a natural expectorant that serves as an antiseptic and helps expulse mucus. It's also good for soothing coughs and fighting nasal congestion. It’s great for bronchitis and covid coughs too. 

This is a wonderful combination however you can just use fresh thyme. 

INGREDIENTS
  
* 1 pint water
* 1 tsp thyme
* 1 tsp oregano
* 1 tsp mint
* 1 tsp eucalyptus leaf (optional)

INSTRUCTIONS

 
* Boil water in a large pot or tea kettle.
* Place herbs in a large stock pot and pour boiling water over herbs.
* Lean head over pot with herbs and water (it should be steaming).
* Cover head with a towel to seal in the steam from the pot.

Thyme can be extremely helpful for sore throats as it is antimicrobial. Steep 1-2 teaspoons fresh thyme to make your own tea. 

It’s also great for helping skin conditions such as acne and rosacea as well as for treating seasonal allergies. Would you like me to tell you about that next time?

My first ever veggie patch (organic). All planted now but how do I keep them alive? 

Will they be eaten by the morning?

I hear I need to go out in the middle of the night with a torch to collect slugs 🐌!!!! Yuk!!! I hate slugs.

Any top tips most welcome please. 

I plan to grow beans and sweetpeas on the wigwams too, oh and strawberries too but haven’t bought them yet.

Strawberries have been found to have the highest levels of pesticides. 

If you don’t want to buy a spray like this you can use baking soda or vinegar too. 

Add one teaspoon of baking soda to four cups of water, and soak your strawberries in a large bowl for five minutes. Then rinse your strawberries with cold running water and pat them dry.

Another effective way to clean pesticide residue off of strawberries is to submerge them in a vinegar bath. In a bowl, mix four parts water with one part white vinegar, then let the strawberries soak in the bowl for 20 minutes. Rinse the strawberries thoroughly with fresh cold water to clean off the vinegar.
