A little taster from my book. Did you know that approximately 50% of teenagers will have one or more nutrient deficiencies? Our bodies are extraordinary, they send us red flags as signs and symptoms of deficiencies.  Use this easy checklist to identify if you have any deficiencies.

Due to the growth and development of teenagers deficiencies are prevalent. Studies show that 50% of teenage girls will have some level of iron deficiency and 75% of teens may have a magnesium deficiency. As you can see low levels of magnesium can present as;

I thought I’d share with you some of the things I do to add colour in our diet, feed the microbiome and add beans and pulses to meals to enjoy their benefits.

A couple of times a week I tray bake roasted veg with lots of garlic, onions, herbs, fresh chilli - whatever I have available. These I add to salads, brown rice, quinoa, sauces or pop into soups. 

I make a weekly bone broth adding apple cider vinegar, onions, garlic, fresh herbs, root veg and bring to the boil and simmer for 12-24 hours. I leave mine in the warming drawer on high overnight. This is a great source of collagen, L glutamine for the gut and L lysine - anti viral. This I enjoy as a snack by itself or add to soups, sauces, gravies. 

I enjoy fermented foods every day whether that’s kefir, kombucha, kimchi, miso soup etc. We know now that these fermented foods help keep out gut flora happy affecting our mood, immunity, metabolism and much more. 

Legumes and pulses are powerhouses of fibre , protein and the darker the colour of any foods we eat are a potent dose of polyphenols - anti-aging! Here Ive added a tin of drained black beans to meatballs. They keep you feeling full up for ages and help improve gut transit too.

I think for many of us we are struggling right now coping with lockdown in the middle of winter and for some of you you may also be suffering with seasonal affective disorder. I’ve certainly seen a few patients this week who are suffering SAD. 

Here are the supplements I recommend. For those of you that have the Aurora Face Mask (available on my website shop) use the daily dose setting which offers the light boost you need to help counteract the lack of sunshine right now. Also try to get outside as much as possible of course as even on the darkest cloudy days we do get some of the light we need. 

Natural Supplements for SAD

* Vitamin D: a lack of exposure to sunlight, a Vitamin D supplement can help combat this deficiency. 
* Omega 3 Fatty Acids: one of the main essential fatty acids in fish oil is DHA. DHA is present in high quantities in the brain and is necessary to help promote normal function of neurotransmitters.
* 5-HTP (5-hydroxytryptophan): 5-HTP is a precursor to serotonin - our happy hormone. It may be helpful to improving Serotonin secretion when taken during the day. Serotonin is a precursor to Melatonin.
* St. John’s Wort: with a long history of use, SJW works well for many people in helping to improve symptoms of SAD

I know I look funny in my sauna ☺️, but I’m  sharing this with you because it has been an absolute saviour during the lockdowns over the past year.

I end my working day in the tranquillity of my heavenly far infrared cosy warm sauna, watching a bit of Netflix or listening to a podcast and unwinding. It’s my me time 😊.

Starting the new year - well! 

Less than 8% of people stick to their new years resolutions. So rather than set new years health resolutions with grand plans to totally overhaul our lives, I prefer a ‘kinder’ and more ‘gentle’ approach. 

Just a few top tips of how I help my clients achieve their goals are as follows; 

🍒1. Create a weekly menu plan - this often saves money and ensures you are eating a balanced range of foods

🍎2. Aim for 2-4 vegetarian meals weekly or start with meatless Monday. We should all be aiming for more plant based meals, not only for our health but also for our planet with the added bonus of helping our waistlines and our pockets (huge savings on eating less meat and fish!)

🥝3. Start each day with healthy snack prep e.g. chop crudite and serve with dips or mackerel or sardine pate (omega 3), chopped fruit, unsalted nuts, seeds or energy balls. When we have everything prepared and easily accessible we are more likely to eat them ;)

🍇4. Prepare 1-2 ltrs of water each morning for the day - add chopped fruit, mint, cucumber etc if you like

🍓5. I also prepare 1.5 ltrs of decaf green tea with fruit slices. Green tea is packed with antioxidants and can significantly boost your metabolism, if you drink approx 5 mugs a day, with the added bonus it contains L-theanine which is very calming. I like mine room temperature :)

🍋6. Schedule in alcohol free days - aim for a minimum of 4 days a week to help your waistline, energy levels, skin and reduce your toxin intake

🍎7. Bulk cooking - create leftovers for lunches the next day or pop the rest in individual portions in the freezer

🥑8. Schedule in your exercise times, just as you do all your other appointments so that you know exactly what you are going to do and when

🍏9. Consider if your relationship with the weighing scales is helpful or harmful to your mental health

🍅10. Rather than focus on restrictions try to focus on positive additions e.g. daily 5 min meditations, more exercise, adding more veg to your meals, learning a new hobby etc.

🎄What year it’s been - 2020 I’ll be glad to see the back of you 🦠. 

I’m signing off for 2020 to spend some quality time with my family and to rest and recharge my batteries for the coming year. I haven’t even bought a single present yet so I need to get my skates on. 

Thank you to you all for all your support over the past year, I really appreciate it as you know. Although it’s a year I’ll be happy to leave behind, I think for many of us we have all learnt so much. For me particularly I have found extraordinary simple things like being in nature more, sunshine, meditation, family time, friendships and laughter can truly sustain us. But I don’t know about you but I can’t wait to travel again - sometime soon I hope 😁🌞. 

I’m still working on my book, and can’t wait to share it with you in the early part of 2021. It’s been one of my busiest years work wise, as people have had time to really focus on themselves and understand that health, vitality and energy are fundamental in our lives. My personal mission is to help as many people as possible live their happiest, longest lives with good health. Disease prevention is so much better than cure right? 

I was fortunate to be able to continue my work in schools throughout the year by hosting live webinars via Zoom and spoke to over 22,000 students this year. I have had lots of new schools sign up to my programme, as sadly the first lockdown triggered a spike in eating disorders and anxiety for young people. 

I am so grateful to be able to do the work I do and love to see people of all ages thrive! 

Wishing you and yours the best possible Christmas and the happiest healthiest new year.

For many of us we are feeling stressed and consumed with busyness leading up to the Christmas period.

I want to share with you the Insght timer and meditation app - it’s free! I encourage you to try over the next 11 days leading up to Christmas to enjoy and listen each morning or evening to one of the guided beautiful meditations. You can choose which ever meditation you feel you need. I started my day with two beautiful meditations that have filled me with positivity, gratitude and allowed me to set my intentions of how I wish my day to proceed. I am grateful for my extraordinary body and all it does for me - in return I will respect my body by nourishing and replenishing it with delicious healthy food, taking some exercise and getting fresh air. 

I’ve also set my intentions that I wish to spend my day usefully and to spread positivity and interactive meaningfully with people I spend time with.

Simple ways to prevent Christmas weight gain 

I love Christmas and adore socialising and seeing my friends and family, which could easily mean by the big day itself I’ve managed to gain several kg very easily. Here are some of the things I do to ensure I don’t pile on the pounds this month. 

1. I enjoy a freshly made (above the ground) veggie or veggie and lentil soup daily - its so satisfying, filling and low cal and packed with nutrients too. 
2. Make fresh crudités everyday to ensure we have healthy snacks to enjoy along with hummus or freshly made mackerel pate. 
3. I don’t make all the super treat foods e.g. mince pies, caramelised nuts, gingerbread, cookies and so on until just before the event or celebration. Literally the day before - so I don’t end up eating it all beforehand. 
4. I also don’t buy the treat food until I am going to use it or eat it e.g. crisps, nibbles etc. 
5. Diarise alcohol free days, this is a must, aim for at least 4 days alcohol free. 
6. Keep up my exercise - no matter what, even if I don’t feel up to it I take a walk to keep my metabolism and energy levels up. 
7. 1/2 of each plate is made up of green leafy veg or other above the ground veggies (very high water content and fibre content) - these keep you full up for longer but don’t have the calorie content of more starchy root veg. 
8. Try to get some early nights to recharge my batteries, ideally with a hot epsom salts bath too ;). 
9. Before heading out for dinner I have a cup of veggie soup to ensure I’m not starving and therefore make better choices and don’t want to eat the entire menu!
10. Ask for pieces of chocolate instead of dessert. Often a bite of chocolate hits the spot rather than a 700 cal dessert. Although if I really want a dessert - I’ll have it. Remember no guilt around food choices, enjoy it, savour it and then move on. 
11. Create healthy swops e.g. dark chocolate instead of creamy milk chocolate truffles, filo pastry mince pies, replace sugar in recipes such as mulled wine and cranberry sauce with xylitol.
12. Skip meals if I’ve overindulged and am really not hungry at all. Listen to your body, it will tell you when you are really hungry.

I’ve had a lovely and rewarding week working in schools with over 700 students and working closely with my clients too. 

I’m posting these patient experiences as I’ve asked my clients to send these in as I’m collating them for my book.

The essence of all these posts is that food is information for our bodies and the foundation of our health and wellbeing. Even the smallest changes can have profound effects on how we feel every day.

My youngest son suffered with eczema as an infant and I chose to clear it naturally, so it was a pleasure to share my experience with this client. We looked at all aspects of diet and environment that also cause eczema.

What’s in store for your weekend? I’m having a wonderful relaxing start, reading with a cuppa. I’m making  myself a yummy açai bowl later, going for a walk, hoping to do some painting and will make some delicious food for the rest of the weekend.

I just received this message from my friend who lives in France.  She’s now 50 and has no need for statins even though she was advised in her late 20s she had a genetic predisposition to high cholesterol. So many things can be managed by simple diet and lifestyle changes without the need for medication. 

This is the second message I got about cholesterol this week. A 50 year old male client with a propensity for early heart disease (family history and genetic profile) also emailed me to say that his ‘heart health diet had reduced his ‘bad’ cholesterol and improved his ‘healthy’ cholesterol profile. He is also loving his new way of eating, the increase in plant foods makes him feel fantastic as it’s so rich in micronutrients and phytonutrients which research shows improves our mood too.

Kimchi - home made 

* 	1 Chinese cabbage
* 	6 cloves of garlic
* 	1 thumb-sized piece of ginger
* 	2 teaspoons caster sugar
* 	2 tablespoons Korean shrimp paste
* 	2 tablespoons dried gochugaru 
* 	200 g daikon , (see tip)
* 	6 spring onions

Method
1. Quarter and remove the stalks from the cabbage, then chop it into 4cm pieces and place in a large bowl. Sprinkle over 4 tablespoons of sea salt and massage it in with your hands.
2. Cover the cabbage with cold water and sit a plate on top to keep the veg submerged. Set aside for 2 hours.
3. Tip the cabbage into a colander, rinse it thoroughly under cold water, then leave to drain for 30 minutes.
4. Peel the garlic and ginger, then place in a food processor with the sugar and blitz to a smooth paste. Transfer it to a bowl and mix in the shrimp paste and gochugaru until combined.
5. Matchstick the daikon and spring onions, then place in a large bowl.
6. Squeeze out any excess water from the cabbage, then add it to the bowl, along with the gochugaru paste. Wearing disposable gloves, use your hands to mix it all together thoroughly.
7. Spoon the kimchi into a large kilner jar and press it down so the juices rise, leaving a gap at the top, then close and seal the lid.
8. Leave the kimchi to ferment at room temperature for 2 to 5 days (place the jar on a plate to catch any brine that might bubble over.) Check the kimchi every day, letting out some gas and pressing the vegetables down into the brine.
9. When the kimchi tastes delicious, transfer the jar to the fridge for up to 3 months.

Tips
Gochugaru is Korean red pepper powder. Daikon is a white radish, also called mooli, and can be found at Asian grocers.

Creating healthy habits for the 2nd lockdown

Having survived the last lockdown I know many of us want to ensure that we don’t pile on the pounds and end up feeling lousy and sluggish this time round. 

I thought I’d share with you some of the things I will be doing to keep healthy over the coming weeks; 

Create daily habits including; 

1. Exercise on waking.  If I exercise first thing in the morning I find it sets me up for the day, I am running on endorphins and I’ve kick started my metabolism.  There are so many great apps that have daily exercise classes including the couch to 5Km which is hugely popular. 

2. Meal planning. This is the absolute number one key to healthy eating, plan out your meals for the week and make leftovers for lunch. 

3. Always have healthy food available in the fridge/freezer e.g. pre-made salads, mackerel pate, dhal, roasted vegetables, soups.  When I’m are busy I always know you have something healthy, energising and already made for me and my family. 

4. Daily shot of home made kefir, kimchi or sauerkraut to feed my microbiome and immunity

6. Drink decaf green tea.  I’m addicted to green tea it contains L-theanine which is so calming and helps with concentration too. 

7. Daily meditation. I love the Insight app which allows me to choose how long I want to meditate for e.g. just 10 mins some days makes all the difference

8. 80% plant based. Fruits, vegetables, legumes and pulses are packed with fibre, antioxidants and phytochemicals that keep us healthful, youthful, energised, help fight diseases like cancer, diabetes and are packed with fibre that are the perfect fodder for our microbiome.

9. Epsom salt baths - 2 mugs full and I soak for 20 mins a couple of times a week. Magnesium is natures tranquilliser and calmant so this helps keep me on an even keel.

10. Daily turmeric, ginger shots - I create a jug of fresh juice - see my earlier post and freeze in ice cubes, I pop one into my hot water and lemon each morning. Turmeric and ginger are potent natural anti inflammatories, antibacterial, antiviral.  What else do they help with? - enhancing digestion, increasing metabolism, relieving stress & blood sugar balance.

It was such a joy to attend the Food Medics conference ‘The future of food’ - Food and Medicine on Saturday.  I loved hearing talks from some of our most inspiring research scientists explaining their latest findings. Dr Giles Yeo discussing how our genes affect our weight and eating habits, Dr Sarah Berry discussing how precision personalised nutrition is the next step for us following the Zoe research programme from Kings London led by Prof Tim Spector, Dr Jenna Macciochi discussing all things immunity and Covid and so many more great talks.
.
I just love these conferences and although it was hosted online, I still thoroughly enjoyed it and found all the speakers were so engaging and passionate about their topics that nothing was lost with the remote presentations. The only disappointment was not being able to socialise with my fellow peers and health professionals. 
.
Here’s hoping it will be live next year.

This year has been an extraordinary year for all of us and for many our mental health has suffered. I’m sure you are aware that as well as lifestyle things like taking time for proper relaxation, sleep and self care, diet can really help too.

We know that certain nutrients can help boost our mood and make out happy hormones like serotonin.

Some of the nutrients important for mental health include omega 3 fats, B vitamins, vitamin D, selenium and feeding out gut bacteria with plenty of fibre from fruits and vegetables and fermented foods too.

Every time you eat is an opportunity to improve your health and wellbeing. This is a staple in my house, rainbow rice 🍚. I make up a batch of brown rice and add it to sautéed onions, garlic and lots of colourful vegetables 🍅. Here I’ve got bell peppers, courgettes, asparagus, green beans, peas, sweet corn. 
.
I’ve managed to get 8 different foods in just one serving of rice, here I served it with Szechuan wild salmon with five spice caramelised cashews cooked in my Thermomix. 
.
I keep in in batches in my freezer so there’s always a fabulous base for any meal. 
.

Tonight’s dinner 😋. Riverford Organics recipe #seasonaleating

Stuffed Squash with black bean chilli

* 	1 medium butternut, large onion or smallish crown prince squash
* 	2 tbsp olive oil, plus extra for roasting
* 	1 large onion, chopped
* 	4 celery sticks, finely chopped
* 	1 red pepper, deseeded and chopped
* 	1 green pepper, deseeded and chopped
* 	3 large garlic cloves, crushed
* 	1–2 tsp crushed chipotle chillies (if you can't source them, substitute another fresh or dried red chilli)
* 	1 tsp dried marjoram or handful of fresh oregano
* 	2 bay leaves
* 	2 tsp ground cumin
* 	1 x 400g can chopped tomatoes
* 	2 x 400g cans black beans, rinsed and drained
* 	juice of 1 lime (approx. 2 tbsp)
* 	small bunch of coriander, finely chopped
* 	salt and black pepper
* 	grated cheese and/or soured cream, to serve (optional)

Method
Prep time: 15 min
Cooking time: 1h 15 min
* 	Step 1 Heat the oven to 180°C/Gas Mark 4. If stuffing a whole squash, cut it in half, scoop out the seeds and pulp, and bake in the oven for about 40 mins. Alternatively, roast in chunks. Heat the oil in a large heavy pan over a medium–high heat. Add the onion and celery.
* 	Step 2 Reduce the heat to medium, and cook, stirring occasionally, for about 10 minutes until soft. Add the peppers and continue cooking for a further 10 minutes or so, stirring frequently.
* 	Step 3 Stir in the garlic, and cook for another minute. Add the chilli, 1–2 teaspoons of salt, 1 teaspoon of black pepper, the herbs and cumin. Give everything a good mix then add the tomatoes. Simmer, uncovered, for about 30 minutes.
* 	Step 4 Stir in the beans and continue to simmer for a further 10 minutes. Remove the bay leaves, stir in the lime juice and coriander and adjust the seasoning to taste.
* 	Step 5 If using roast squash, add it now, heat through, and then serve. If stuffing a whole squash, fill each roasted squash half with the filling mixture. Top with grated cheese or soured cream (or both), if you like
