About an hour and a half from Florence, the road slowly leaves behind the noise and pace of modern life and begins to unravel into everything you imagine Tuscany should be. Cypress-lined lanes. Ancient stone villages. Olive groves and vineyards stretching across rolling hills that disappear into the horizon.
And then, finally, you arrive at a traditional Tuscan farmhouse, surrounded by lavender fields and uninterrupted 360-degree views across one of Italy’s most breathtaking landscapes.
When I was there in May, wild poppies swayed gently in the breeze between the rows of lavender, their vivid reds dancing against endless shades of green. Swallows darted effortlessly through the warm air, returning to their nests tucked beneath the old farmhouse eaves, while the unmistakable call of the cuckoo echoed across the valleys. The only soundtrack was birdsong from dawn until dusk, accompanied by the scent of lavender and herbs warming in the Tuscan sunshine. The vista itself felt therapeutic, nature, perspective and stillness all rolled into one. In a world that constantly demands more from us, this place quietly invites us to do less.
As one of the nutritionists on the InSpa team, I spend the week delivering talks, offering one-to-one consultations and helping guests create practical strategies they can take home. Yet one of the greatest lessons this retreat teaches requires no lecture at all. Fresh air, nourishing food, meaningful movement, genuine connection and deep rest remain some of our most powerful health interventions.

Mornings begin gently. Some guests choose morning walks, while others roll out their mats for yoga, stretching and mobility sessions as the sun rises over the hills. There is an ease to everything. No expectations. No pressure. Simply an invitation to reconnect with your body.
Breakfast is always a celebration of abundance rather than restriction. Fresh vegetable and fruit juice shots appear each morning alongside homemade granola, chia pots, colourful fruit salads and nourishing hot options including eggs, tofu, mushrooms and tomatoes. There is always our wonderfully nutty, flax-rich seeded bread served with delicious nut butters.
Everything is naturally gluten and dairy free, deeply nutrient-dense and genuinely delicious. It proves, time and again, that healthy food should never feel like punishment.
As the day unfolds, guests can choose from resistance sessions, aerobic classes, yoga, Pilates, breathwork, meditation and relaxation practices. Private one-to-one personal training is available for those wanting more tailored guidance, while afternoon sessions might include boxing, dance-inspired movement or restorative Pilates, depending on the instructors and programme that week.
What I love most about InSpa is that absolutely everything is optional. There is no culture of perfectionism here. Nothing feels compulsory. Some guests embrace every activity, while others spend an afternoon reading beneath an olive tree, listening to little more than birdsong and the breeze moving through the lavender. Both approaches are equally celebrated.
Lunches are magnificent buffet spreads overflowing with colourful, locally sourced organic produce. There is always an excellent protein source, generous portions of legumes, vibrant salads and vegetables dressed generously with beautiful extra virgin olive oil, ensuring guests naturally embrace the very principles we know support longevity and vibrant health.
As a nutritionist, I often remind people that the Mediterranean lifestyle is about so much more than individual foods. It is about diversity, pleasure, community and consistency. Here, those principles simply become a way of life, one that many guests find surprisingly easy to continue once they return home.
Evening brings another opportunity to gather around the table. Beautifully plated starters and mains showcase seasonal Tuscan ingredients with creativity and elegance. There are no desserts, allowing guests who wish to create a gentle calorie deficit to do so without ever feeling deprived. Yet nobody leaves hungry. The emphasis is always on nourishment rather than restriction.
Importantly, there is no unnecessary austerity. Coffee and tea remain firmly on the menu, meaning guests avoid the headaches and fatigue that often accompany stricter wellness programmes. The philosophy is simple. Support the body, don’t punish it.
One of the highlights of every retreat is our wonderful cookery demonstration, where guests learn practical ways to recreate many of the dishes back at home. There is something incredibly empowering about discovering that wholesome, deeply nourishing food can also be beautiful, generous and full of flavour.
Twice during the week, we venture further afield on longer hikes lasting between two-and-a-half and three hours. We wander through breathtaking rolling landscapes, olive groves and ancient villages that seem untouched by time. These walks become about far more than exercise. They become opportunities to reconnect with nature, with one another and often with ourselves.
After our longer hikes, one of my favourite rituals is heading straight to the beautiful social sauna. There’s something wonderfully restorative about sitting in the gorgeous sauna hut together, looking out across the Tuscan landscape before cooling down in the pool and letting tired legs recover. After several hours exploring the rolling hills, it feels like the perfect reward.
Yoga sessions take place in what is quite simply the most beautiful yoga space I have ever experienced.
